Does video over the network add delay?

A well-configured LAN adds anywhere from under a frame to a few frames - fine for most live work. Delay problems usually come from undersized switches or Wi-Fi links, not the concept.

What network gear does a small IP studio need?

A wired gigabit switch is the floor; multi-camera HD work wants 2.5 or 10 gigabit on the camera ports and a switch that handles multicast properly. Wi-Fi is for monitoring only.
